Muffins

 

Easy  and fun ideas:  To make the batter:  Mix the Muffin Mix with 3 eggs,  3/4 cup oil, 1 cup water.  Blend by hand or with mixer until well  blended.  

Add one of the following to the batter:


  • 1 cup fresh or frozen berries; blueberries, cranberries, raspberries, blackberries etc
  • Lemon Poppy: Add lemon juice to your 1 cup water so that you have  lemon in the water.  Fold in 1 Tbsp poppy-seeds to the batter.  Add  fresh or dried lemon zest for a stronger lemon flavor.
  • Pumpkin muffins:  Blend in 1 cup canned pumpkin, 1 Tbsp cinnamon, 1 tsp ground cloves, 1 tsp all spice

Double Dutch Brownies

 

To make the Double Dutch Brownies:

Add  1/2 cup Hot Water and 1/2 cup oil.  Mix in a bowl with a spatula until  blended.  Spray your pan first 8x8, 9x9, 9x13 all work.  The smaller the  pan the bigger the brownies.

Topping Ideas after the brownies are baked:


  • Top with caramel, chocolate icing, german chocolate icing, cream cheese icing, ganache, pie filling, whipped cream.

Peanut Butter Crispies Brownie

Bake Brownies first.

2 cups semi sweet chocolate chips

1 Tbsp Butter

1 heaping cup creamy peanut butter

1 3/4 cup crispy rice cereal

Microwave chocolate chips, peanut butter and butter. Stir - blend in cereal- top the baked brownies. Cool

Peanut Butter Cup Brownies

Bake Brownies first.

Take  out of the oven - top with chopped peanut butter cups. Put back in the  oven for 5 minutes to melt chocolate. Take out of oven and level the  peanut butter cups loosely with a knife.

Peanut  Butter Swirl Brownies

Place brownie 

batter in pan. Drop

1/2 teaspoon dollops

of peanut butter

evenly on top of batter. With a knife run down the peanut butter to create swirls. Bake Accordingly

Peanut Butter Cookie Brownies

Place brownie batter in pan. Drop small pieces of peanut butter cookie dough around the batter. Swirl slightly.

Bake accordingly to brownie instructions.

Melting Mint Brownies

 

To make the Melting Mint Brownies

Add  1/2 cup Hot Water and 1/2 cup oil.  Blend by hand until well blended.  Spray your pan first.  8x8, 9x9, 9x13 all work.  Spread batter in the  pan.

Ideas:


  • Serve with mint ice cream
  • Top the finished baked brownie with Mint Green icing or Green mint candies to add a little color

Raspberry Truffle Brownies

 

To make the Raspberry Truffle Brownies:

Add 1/2 cup oil and 1/2 cup hot water.  Blend by hand until well blended.

Ideas:


  • Make a parfait:  cut brownies into bite size pieces.  Layer cups with brownie bites, fresh raspberries and fresh whipped cream

Coffee Cake!

Coffee Cake Recipe: Streusel: 1 cup flour, 1 cup sugar, 1 TBSP Cinnamon, 6 TBLSP melted Butter or the simple version topping: ¾ cup granulated sugar and 1 Tbsp Cinnamon Filling:  1 cup Brown Sugar, 1 ½ TBSP Cinnamon 1. Pour/spread half the batter  into the prepared pan (spray) spreading all the way to the edge. 2.  Sprinkle the filling evenly on the batter. 3. Spread remaining batter on  top of the filling. Use a knife to gently swirl the filling into the  batter. Don’t combine filling and batter thoroughly, just swirl the  filling through the batter lightly. 4. Sprinkle the streusel or simple  version topping over the batter in the pan. Bake 350 degrees until  golden brown and edges are browned. A toothpick in the middle should  come out clean. 55-60 min. Variation: Add up to 1 cup of fruit blended  into the batter: apples, berries, nuts etc.   

Vanilla Variations

 

After you have the batter prepared – Create your favorite variations:

Berry Variations: Add 1 cup favorite berries: blueberries, cranberries, raspberries, boysenberry etc.to finished batter and blend by hand.

Chocolate Chip: Add 1 cup of chocolate chips to finished batter and blend by hand.

Banana Nut: Add ½ cup rough chopped walnuts and 2 chopped ripe bananas to finished batter and blend by hand.

Lemon Poppy – Lemon Blueberry:  Add juice and zest of one fresh lemon, 1 tbsp Lemon extract. Add 2 Tbsp  or more of poppy seeds to finished batter and blend by hand or 1 cup  fresh/frozen blueberries.

Cranberry Variations:  Substitute 1 cup of orange juice instead of the 1 cup water for  Variations. Fold in 1 cup chopped fresh or frozen cranberries to the  finished batter.

Pumpkin:  Add 1 cup of pumpkin puree, 1 tsp each of nutmeg, allspice and 1 tbsp  cinnamon. Spread with cream cheese icing for amazing pumpkin bars. Makes  2 quick breads or 18 muffins or 1 pan 9x13 bars.

Strawberry/Raspberry Preserve Swirl:  To finished batter fold in 1 cup fresh or frozen raspberries. Swirl 1  Tbsp raspberry jam or amount to taste on top of each muffin prior to  baking.

Apple Variations:  To the finished batter add 1 cup fresh apple pieces and ½ cup rough  chopped pecans and 1 tsp Cinnamon. After baked and still warm top cake  with whole pecans and drizzle with ice cream caramel topping.

Eggnog: Add ½ cup water only and 1 cup Eggnog along with a pinch of allspice.

Madagascar Vanilla or Almond or Cherry: To finished batter add 1 tbsp Of Madagascar Vanilla, cherry or almond extract 

Grasshopper:  To finished vanilla batter mix in 1 drop of green coloring plus ¼ tsp  of mint flavoring, top with sugar or crushed mint candies.

Citrus Burst:  To either vanilla or chocolate batter add the zest of one large orange  and mix in thoroughly. Top with powder sugar icing using orange juice  and flavored with orange zest. (Can substitute lemon and tangerine).

Amazing pound cake:  

1 Vanilla Variations mix

3/4 cup butter

1 cup water

3 eggs

Blend in a mixer until well blended.  About 3 minutes.  Place in 2 - 1 pound loaf pans.  

Serve with fresh berries and whipped cream.

Variations:  Add 1 Tbsp of extract to the batter:  almond extract, butter extract, orange, strawberry etc.

Variations:  Fold in up to 1 cup of fruit to make a beautiful fruit pound cake.
